Jeremy Cuevas grew up in California and was taught how to cook by his Mexican grandmother, Elodia, before working in fine-dining restaurants in London. He parks his La Cocina Cuevas Mexican food truck outside his home, an old dairy farm in the Naul in north Co Dublin, and operates a drive-through, pre-order collection service at the weekends. The menu changes weekly, but last weekend you could have eaten beef and cheese taquitos, Baja-style fish tacos, and elotes (grilled corn on the cob coated in chipotle mayo and rolled in hot Cheetos, and finished with lime and coriander).
